Orange Grits and Greens

Ingredients

Orange Grits:

  • 2 cups water

  • 1 cup orange juice

  • 1/2 tsp grated orange peel

  • 3/4 cup quick-cooking grits, uncooked

  • 1/2 tsp salt

  • 2 Tbsp packed brown sugar

    Greens:

  • 1 bunch of chard

  • 1 clove of garlic

  • 1 Tbsp olive oil

  • Flavored vinegar (optional)

Tools Needed

  • 1 liquid measuring cup

  • 1 set dry measuring cups

  • 1 large spoon

  • 1 set measuring spoons

  • 1 box grater

  • 1 medium saucepan

  • 1 large saucepan

  • 1 set of tongs

  • 1 colander

Steps:

Orange Grits

  1. In a medium saucepan over medium heat, bring water and orange juice to a boil.

  2. Grate 1/2 tsp of orange peel.

  3. Slowly stir in the grits, orange peel, and salt. Reduce heat; simmer, stirring occasionally 3 to 4 minutes until thickened.

  4. Pour into serving dishes and sprinkle with brown sugar. Let stand until sugar melts, about 2 minutes. Serve hot.

Greens

  1. Wash the greens thoroughly, using the colander to drain. Remove stems and tear leaves into 1-inch strips.

  2. Mince garlic. Add oil to a large saucepan over low heat. When oil is hot, add minced garlic to pan and cook until fragrant.

  3. Place greens in the saucepan and saute until wilted, for 5 to 7 minutes. Add a splash of vinegar before serving if preferred.
