Mediterranean Salad with Dressing

Ingredients

Salad Dressing:

  • 1 Tbsp. + 1 tsp. lemon juice

  • 1/8 tsp. salt

  • 1/4 tsp. fresh or dried oregano

  • 2 Tbsp. olive oil

  • freshly ground pepper

  • 3/4 cup canned chickpeas, drained and rinsed

Salad

  • 1/2 small head Romaine lettuce

  • 1 cucumber

  • 1/2 red bell pepper

Tools Needed:

  • 1 small bowl

  • 1 large bowl

  • 1 set of dry measuring cups

  • 1 set of measuring spoons

  • 1 can opener

  • 1 cutting board

  • 1 chef’s knife

  • 1 large metal spoon

  • 1 whisk

  • 1 handheld strainer

  • 1 set of tongs

  • 1 vegetable peeler

  • 1 small spoon


Steps:

  1. In a small bowl, whisk together all of the dressing ingredients until they are well combined. Add the drained and rinsed chickpeas and set aside.

  2. Wash and dry the lettuce. Gently tear the lettuce into 2-inch pieces. Transfer the lettuce into a large bowl.

  3. Peel the cucumbers and cut in half lengthwise (the long way). Remove the seeds with a spoon. Lay the cucumber flat side down and slice into 1/4 inch thick slices. Add the sliced cucumbers to the lettuce bowl.

  4. Wash the red bell pepper and cut it in half, lengthwise. Remove the seeds and stem. Slice the pepper, lengthwise, into 1/4 inch slices and add them to the bowl.

  5. Just before serving, spoon the chickpeas and dressing over the salad and toss well. Serve immediately.
