Chopped Salad

Ingredients:

  • 1 large red onion

  • 1/8 tsp salt

  • 1/2 cup red wine vinegar

  • 1 cup cherry tomatoes

  • 1 yellow bell pepper

  • 1/4 cup feta cheese

  • 2 Tbsp chopped fresh parsley

  • 2 Tbsp chopped fresh basil

  • 1 Tbsp plus 2 tsp olive oil

  • 1/4 tsp freshly ground pepper

Tools Needed:

  • 1 cutting board

  • 1 chef’s knife

  • 1 medium bowl

  • 1 liquid measuring cup

  • 1 set dry measuring cups

  • 1 set measuring spoons

  • 1 large metal spoon

  • 1 small bowl


Steps:

  1. Slice onion as thin as possible, then cut each slice in half again. Place onions in a medium bowl, add salt and red wine vinegar. Let stand for 15 minutes.

  2. Wash tomatoes, yellow bell pepper, basil and parsley. Chop parsley and basil, measure and place in a small bowl. Slice cherry tomatoes in half.

  3. Cut yellow peppers into 1-inch squares.

  4. After 15 minutes, drain vinegar into measuring cup. Measure 1 Tbsp of vinegar and add it back to the onions, discard the remainder. Add olive oil along with the chopped tomatoes, yellow peppers, parsley and basil to the bowl with onions. Mix well.

  5. Place feta cheese on cutting board, cut and crumble into small pieces. Measure 1/4 cup and add to salad. Gently mix all the ingredients together. Set aside until ready to serve.
