Fried Plantains (Patacones)

Ingredients

  • 3 very ripe plantains

  • 1/2 cup vegetable oil

  • Pinch of salt (optional)

Tools Needed:

  • 1 chef’s knife

  • 1 ruler

  • 1 cutting board

  • 1 large skillet

  • 1 set of tongs

  • 1 plate

  • paper towels

  • 1 tortilla press (optional)


Steps:

  1. Peel the plantains and cut diagonally into 1/2-inch thick slices.

  2. In a large skillet, heat the oil over medium-high heat. Add the plantain slices to the skillet in a single layer. Cook about 2 minutes per side until golden brown.

  3. Remove the plantain slices with tongs and place on a plate lined with paper towels. Sprinkle with salt, if desired. Allow to cool slightly.

  4. Optional step for extra crisp plantains: place fried plantains individually on a tortilla press and flatten to 1/4-inch thickness. Fry again a in a large skillet with oil over medium-high heat, for 1 to 2 minutes per side. Place on a plate lined with paper towels to cool slightly.
