Arepas con Queso

Ingredients

  • 1 (25 oz) can of white hominy

  • 2 Tablespoons butter, plus 1-2 Tbsp more for griddle

  • 2 Tablespoons milk

  • 1⁄2 cup shredded Monterey jack cheese or low-moisture mozzarella

Tools Needed:

  • 1 food processor or blender

  • 1 can opener

  • 1 hand strainer

  • 1 set of measuring spoons

  • 1 medium bowl

  • 1 rubber spatula

  • 2 small bowls

  • 1 box grater (if needed)

  • 3 plates


Steps:

  1. Drain and rinse hominy in a hand strainer. Add to a food processor with melted butter and milk. Blend until a smooth masa dough has formed. If its too think, add milk 1 teaspoon at a time until the mixture blends smoothly. Add to a medium bowl.

  2. Dip your hands in cool water to keep the dough from sticking to you. Scoop about 1 tablespoon of the masa into your hands and form into a ball. Smash the ball slightly and make an indent in the center with your thumb.

  3. Fill the indent with 1 teaspoon of shredded cheese. Cover the cheese with 1/2 tablespoon more of masa, seal the edges, and flatten to a thickness of 1/2 inch. Form the remaining arepas the same way and keep on plates until ready to cook.

  4. Heat a griddle or skillet to 400 degrees or high heat. Add butter to the skillet and cook the arepas, 3 to 4 minutes per side until they are golden-brown on both sides.
