Edamame Salad with Miso Dressing

  • 1 cutting board 

  • 1 chef’s knife 

  • 1 small bowl 

  • 1 whisk 

  • 1 liquid measuring cup 

  • 1 set measuring spoons 

  • 1 skillet 

  • 1 large bowl 

  • 1 set tongs

Ingredients

SALAD

  • 1 cup shelled edamame pods 

  • 1 head romaine lettuce

  • 5 radishes

  • 2 Tablespoons sesame seeds

DRESSING

  • 2 Tablespoons white miso paste 

  • 2 teaspoons Dijon mustard

  • 1/3 cup rice vinegar 

  • 2 Tablespoons finely minced shallots or onions

  • 1 Tablespoon granulated sugar 

  • 1/2 cup vegetable oil


Steps

  1. Chop shallots or onions into small pieces. 

  2. In a bowl, use a whisk together the miso, Dijon mustard, rice vinegar, shallots or onions and sugar. 

  3. Add vegetable oil in a slow, steady stream, whisking constantly until mixture is creamy and smooth. Set aside. 

  4. Toast sesame seeds in skillet over medium heat. Set aside. 

  5. Gently tear the romaine lettuce into 2-inch pieces. 

  6. Shell the edamame pods. 

  7. Wash and slice radishes. 

  8. Place romaine, edamame and radishes in large serving bowl. 

  9. Just before serving, pour dressing over salad and toss well until well coated. Top with toasted sesame seeds.
